Fillet of squirrel, wild pigeon and organic rabbit - shot by the chef himself - were part of a unique cookery demonstration held recently for current Professional Cookery students at Buxton College.
Ralph Skripek, 44, is widely considered to be one of the leading game cookery experts in the UK. As well as running his Derbyshire restaurant and catering business, The Butlers Pantry based in Mickleover, he regularly hunts local game, for which he has created mouth-watering recipes for his first recipe book Wild Chef due out early December and available to buy direct from www.butlerspantryderby.co.uk.
Ralph, who left Buxton College in 1988 after completing the City and Guilds General Catering qualification, demonstrated and talked to current Professional Cookery apprentices and Professional Cookery Diploma (VRQ Levels 2 and 3) students about how to hunt, prepare and cook a range of game.
